SWEET POTATO SOUFFLE
3 c. mashed sweet potato
1 c. sugar
1/2 tsp. salt
2 eggs, beaten
1/3 stick butter
1/2 c. milk
1 tsp. vanilla
Mix all ingredients, pour into a greased baking dish. Cover with following topping:
1 c. brown sugar
1/3 c. flour
1 c. chopped nuts
1/3 stick butter
Mix and sprinkle on souffle. Bake 35 minutes at 350 degrees.
